Spinach Falafel
INGREDIENTS
2½ cup chickpeas (cooked)
1 onion, finely chopped 🧅
5 cloves garlic, minced 🧄
1 cup (packed) frozen spinach
½ cup flour
2 tbsp breadcrumbs
2 tsp dried parsley
1 tsp cumin, toasted
1 tsp ground coriander, toasted
½ tsp salt
½ tsp baking soda
½ tsp baking powder
TAHINI SAUCE
½ cup water
¼ cup tahini
1 tbsp lemon juice 🍋
½ tsp salt
DIRECTIONS
Preheat oven to 350º
Combine chickpeas, onion, garlic, and spinach
In separate bowl, combine all dry ingredients
Slowly add dry ingredients to wet and stir to combine
Form golf-ball sized balls and place on baking sheet lined with parchment paper
Bake until light brown (about 20 min), flipping after 10 min.
