Spinach Falafel

INGREDIENTS
2½ cup chickpeas (cooked)
1 onion, finely chopped 🧅
5 cloves garlic, minced 🧄
1 cup (packed) frozen spinach
½ cup flour
2 tbsp breadcrumbs
2 tsp dried parsley
1 tsp cumin, toasted
1 tsp ground coriander, toasted
½ tsp salt
½ tsp baking soda
½ tsp baking powder

TAHINI SAUCE
½ cup water
¼ cup tahini
1 tbsp lemon juice 🍋
½ tsp salt

DIRECTIONS

  • Preheat oven to 350º

  • Combine chickpeas, onion, garlic, and spinach

  • In separate bowl, combine all dry ingredients

  • Slowly add dry ingredients to wet and stir to combine

  • Form golf-ball sized balls and place on baking sheet lined with parchment paper

  • Bake until light brown (about 20 min), flipping after 10 min.
