Chicken & Waffles 🐓 🧇
A combination of (modified) Spicy Southern Kitchen’s recipe and Rose Delemeester’s Belgian waffle recipe
CHICKEN
2 lbs chicken breast, filleted 🐓
1 cup buttermilk 🥛
2 tsp GARLIC Tabasco (not regular) 🌶
1 egg, lightly beaten 🥚
¾ cup panko
½ cup flour
1 tsp seasoned salt
1 tsp smoked paprika
1 tsp onion powder
½ tsp garlic powder
¼ tsp white pepper
peanut or vegetable oil (for frying)
DIRECTIONS
Marinate chicken breasts in buttermilk and garlic Tabasco for 2 hours (in refrigerator)
Remove chicken from marinade, whisk egg 🥚 into marinade, then add chicken back in
Combine panko, flour, and spices
Heat 1” oil in nonstick pan (to 375º)
Dredge chicken in seasoned panko and fry till golden
WAFFLES
2 cups flour
¾ cup sugar
3½ tsp baking powder
2 eggs, separated
1½ cup milk
1 cup butter, melted 🧈
1 tsp vanilla extract
DIRECTIONS
In a large bowl, combine flour, sugar, baking powder
In separate bowl, lightly beat egg yolks, then add milk, butter, and vanilla
Stir wet ingredients into dry until just combined
In a separate bowl, beat egg whites until stiff peaks form
Fold beaten egg whites into batter
Cook in waffle iron until golden brown
TOPPINGS: TABASCO SYRUP
⅓ cup maple syrup 🍁
1 tbsp butter, melted 🧈
1½ tsp Tabasco 🌶
Alternatively, can simply top with Frank’s, honey, syrup, or any combination thereof
