Beef Stroganoff

INGREDIENTS

2–3 lb round steak, cubed 🥩
2 tbsp olive oil
salt, to taste
6oz sliced mushrooms 🍄
1 tsp onion powder
2 tbsp sherry
6 oz sour cream

1 onion, finely chopped 🧅
1 tbsp olive oil
1 can cream of mushroom soup
2 oz tomato paste
2 tsp soy sauce
6 dashes Tabasco sauce
2 bay leaves
2 tsp thyme
1 tsp curry powder

DIRECTIONS

  • Heat olive oil on high and sear meat on all sides, salting as it sears

  • Add mushrooms and onion powder, cooking till mushrooms caramelize (add oil as needed)

  • Add sherry and deglaze

  • Reduce heat to medium, add sour cream, and cook 10 min.

  • In separate pan, heat olive oil on medium high and caramelize onion

  • Add remaining ingredients and cook for 10 min.

  • Add to meat mixture and stir to combine; simmer 10 min.

    Serve with egg noodles
