INGREDIENTS

3 cups mixed lentils, soaked 3+ hours (black, red, yellow...)
2 tbsp ghee, butter, or equivalent 🧈
1 tbsp cumin seeds

2 bay leaves
1 cinnamon stick
3 cloves (whole)
1 large yellow onion, minced 🧅

1 tbsp garam masala
1 tbsp coriander
1 tbsp turmeric
2 tsp cumin powder
2 tsp chili powder
2 tsp cayenne (or to taste)

3” ginger, minced
6 cloves garlic, minced 🧄
3 roma tomatoes, finely diced 🍅

DIRECTIONS

  • Heat ghee in large pot on medium heat

  • Add cumin seeds and stir fry till they begin to pop

  • Add bay leaves, cinnamon stick, and cloves, stir frying until cinnamon is very fragrant (about 30 sec.)

  • Add onion and stir fry until transparent

  • Add spices and stir fry until toasty and fragrant

  • Add ginger and garlic and stir fry until garlic is lightly browned

  • Add soaked lentils and stir to combine. Cook for about 5 min., stirring occasionally. Add water as necessary to keep from burning.

  • Stir in tomatoes + 1 cup of water. Cook till tomatoes are reduced.

  • Add ~6 cups of water, stir, and bring to boil.
    Reduce to simmer.

  • Cook for about 1 hour, or until lentils are fully cooked. Stir occasionally; add water as necessary.
