INGREDIENTS
3 cups mixed lentils, soaked 3+ hours (black, red, yellow...)
2 tbsp ghee, butter, or equivalent 🧈
1 tbsp cumin seeds
2 bay leaves
1 cinnamon stick
3 cloves (whole)
1 large yellow onion, minced 🧅
1 tbsp garam masala
1 tbsp coriander
1 tbsp turmeric
2 tsp cumin powder
2 tsp chili powder
2 tsp cayenne (or to taste)
3” ginger, minced
6 cloves garlic, minced 🧄
3 roma tomatoes, finely diced 🍅
DIRECTIONS
Heat ghee in large pot on medium heat
Add cumin seeds and stir fry till they begin to pop
Add bay leaves, cinnamon stick, and cloves, stir frying until cinnamon is very fragrant (about 30 sec.)
Add onion and stir fry until transparent
Add spices and stir fry until toasty and fragrant
Add ginger and garlic and stir fry until garlic is lightly browned
Add soaked lentils and stir to combine. Cook for about 5 min., stirring occasionally. Add water as necessary to keep from burning.
Stir in tomatoes + 1 cup of water. Cook till tomatoes are reduced.
Add ~6 cups of water, stir, and bring to boil.
Reduce to simmer.Cook for about 1 hour, or until lentils are fully cooked. Stir occasionally; add water as necessary.
