Lemon Chess Pie

SWEET VERSION (Gran’s)
chilled pie crust
2 cups sugar
1 tbsp flour
1 tbsp cornmeal
4 eggs 🥚
¼ cup melted butter (cooled) 🧈
¼ cup milk 🥛
¼ cup lemon juice 🍋
4 tbsp lemon zest

TANGY VERSION
chilled pie crust
1½ cups sugar
1 tbsp flour
1 tbsp cornmeal
4 eggs 🥚
¼ cup melted butter (cooled) 🧈
¼ cup milk
½ cup lemon juice 🍋
4 tbsp lemon zest

TIP: Try bruleeing 🔥 the top of this version after baking!


DIRECTIONS

  • Preheat oven to 375º

  • Mix sugar, flour, and cornmeal in large bowl

  • Add remaining ingredients and beat with mixer until thoroughly blended

  • Pour into unbaked pie shell (8–9”)

  • Bake 35–40 min
