Ginger Cookies

INGREDIENTS

2 cups sugar (raw cane sugar 👍)
1½ cup shortening, melted & cooled 🧈
½ cup molasses
2 eggs

4 cups AP flour
4 tsp baking soda
2 tsp cinnamon
1 tsp ground clove
1 tsp ground ginger
1 tsp salt

Coarse granulated sugar (like turbinado)

DIRECTIONS

  • In a large bowl, fully mix sugar, melted shortening (or butter), molasses, and egg

  • Combine dry ingredients in separate bowl, then stir into wet ingredients—mixing well

  • Refrigerate about 1 hour

  • Set oven to 375º

  • Form refrigerated dough into 1” balls, roll in granulated sugar, and place on greased cookie sheet (2” apart)

  • Bake 7–8 min.
