INGREDIENTS

1 lb chicken breast OR pork, thinly sliced πŸ“πŸ–
2 cloves garlic, minced πŸ§„
1” ginger, grated
2 tbsp soy sauce
1 tbsp rice wine
1 tsp rice vinegar
1 tsp sugar

2 tbsp sesame oil
1 small onion, sliced πŸ§…
2 cloves garlic, minced πŸ§„
8 oz shitake mushroom, sliced πŸ„
½” ginger, grated
1 carrot, julienned πŸ₯•
2 regular sized bok choy (or 6 small), sliced πŸ₯¬
3 green onion, finely sliced (greens and whites separated)

ΒΌ cup soy sauce
3 tbsp sweet soy sauce
2 tbsp oyster sauce
1 tbsp rice vinegar

4 oz soba noodles, cooked 2 min less than package instructions

DIRECTIONS

  • Marinate chicken (or pork) in garlic, ginger, sugar, and sauces for at least 4 hours

  • In a wok, heat sesame oil on high heat and brown marinated chicken/pork slices; set aside

  • Add sliced onions and stir fry until caramelized. Add additional oil if needed.

  • Add minced garlic and stir fry about 30 sec.

  • Add mushrooms and stir fry about 2 min.,

  • Add ginger and carrots; stir fry about 1 min.

  • Add bok choy stalks and whites of green onion; stir fry about 1 min.

  • Combine sauce ingredients and pour into stir fry; cook until it begins to thicken

  • Add bok choy leaves and greens of green onion

  • Add par-cooked noodles and combine with tongs

  • Return chicken (or pork) to wok and combine

  • Cook until sauce is fully reduced
