1 tbsp ginger, grated

1 tbsp (fresh) lime juice
2 tsp salt
1Β½ tsp cumin
1Β½ tsp coriander
ΒΌ cup olive oil

  • Combine tomatoes with spices and wet ingredients

  • Rub spice paste under chicken skin and marinate for 8 hours or overnight
