Crazy Feta

Adapted from this recipe, similar to Mezè D.C.

INGREDIENTS

16 oz good* feta
3 jalapeños
1 lemon, zested & juiced 🍋
2 whole bulbs garlic, roasted
~¼ cup olive oil
salt and fresh ground pepper

*In a block, preferably fished from a barrel

DIRECTIONS

  • Preheat oven to 400º

  • Coat jalapeños in olive oil and place on baking sheet. Cut top off garlic bulbs, pour 1 tbsp over each, and seal with aluminum foil.

  • Bake jalapeños and garlic in oven:
    Jalapeños 30 min (flipping halfway)
    Garlic for 45 min

  • Once cooled, remove skin from jalapeños. Remove seeds and mince the peppers.

  • Crumble feta into medium bowl. Squeeze in the roasted garlic; add minced jalapeños and remaining ingredients.

  • Use fork to cream ingredients together and ensure roasted garlic is evenly distributed. Add olive oil as needed to ensure there are no feta lumps.

  • Allow flavors to meld at room temp for 2+ hours.

  • Serve as dip with pita chips/veggie sticks or as a topping on gyros
