Italian Chicken, Mushrooms, or Veggies

INGREDIENTS

4 tbsp olive oil or butter
2 large chicken breasts, cubed πŸ“
OR baby bella mushrooms πŸ„
4 cloves garlic, minced πŸ§„
2 tsp onion powder πŸ§…
1 tsp salt
1 tbsp Italian seasoning
2 tsp red pepper flakes (or more, to taste) 🌢
1 tsp fresh cracked black pepper

Optional: ¼ cup white wine 🍾

VEGETABLE ALTERNATIVE

Instead of chicken, try summer vegetables (with or without mushrooms):
1 Squash
1 Zucchini
1 Bell pepper
1 Sweet onion πŸ§…
2 Roma tomatoes πŸ…


DIRECTIONS

  • Heat olive oil in pan (medium high heat)

  • Add garlic and stir fry ~30 sec.

  • Add chicken and immediately add salt and onion powder; stir to cover completely and let sit ~30 sec.

  • Add Italian seasoning, red pepper flakes, and black pepper and stir to coat chicken

  • Stir fry until chicken has golden sides and is completely cooked
    If using, deglaze with white wine

TO SERVE:
Serve with white rice 🍚
OR with fettuccini alfredo
OR as a salad protein

VEGETABLE DIRECTIONS:

  • Heat olive oil in pan (medium high heat)

  • Stir fry sweet onion πŸ§… till caramelized

  • Add squash, zucchini, onion powder, salt and stir fry until vegetables gain color

  • Add garlic πŸ§„, bell pepper, Italian seasoning, red pepper, black pepper (stir fry ~30 sec)

  • Add tomatoes πŸ… and stir fry on high heat until tomato liquid mostly evaporates or reduces
    If using, deglaze with white whine while tomato liquid is still reducing
