Fried Okra
INGREDIENTS
1 lb fresh okra, cut into spears or chunks
(or frozen: thawed, drained, patted)
1½ tsp garlic powder
1 tsp onion powder
1 tsp cumin
½ tsp salt
½ tsp pepper
COATING FLOUR:
1 tsp reserved spice mix
1/4 cup rice flour
3 tbsp corn starch
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
½ tsp salt
black pepper, to taste
DIRECTIONS
Mix spices together and reserve 1 tsp.
Sprinkle spices over cut okra in large bowl. Stir to combine.
Combine coating flour ingredients and pour over okra, stirring to fully coat.
The breading should be slightly damp. If it’s too dry, sprinkle with water and stir again.
Fry at 350º in batches. Drain on rack.
Serve hot, preferably with chipotle ranch.
