Solterito (Peruvian Chopped Salad)
Adapted from the recipe by Pamela Salzman
INGREDIENTS
2 cans of corn 🌽
2 cans baby lima beans
½ diced red onion 🧅
1 cup cherry tomatoes, halved 🍅
1 sweet bell pepper, diced
¼ cup white wine vinegar
6 tbsp extra virgin olive oil
¼ cup kalamata olives, sliced (optional)
½ tsp sea salt 🌊🧂
freshly ground black pepper, to taste
TOP WITH:
1 cup diced feta or queso fresco
2 tbsp finely chopped cilantro
DIRECTIONS
Drain corn and lima beans; combine in large bowl
Add onion, tomatoes, jalapeño, and olives
Add vinegar, olive oil, salt, and pepper
Combine and allow flavors to meld for at least an hour before serving
Top with queso fresco and cilantro and serve
