Indonesian pickle garnish

INGREDIENTS

1 English cucumber (peeled, seeds removed, finely diced) 🥒
½ carrot, finely diced 🥕
3 Chinese shallots, finely diced
1–2 Thai chilis (seeds removed, finely diced) 🌶
4 tbsp rice vinegar
4 tbsp water
2–3 tsp sugar
1 tsp salt

DIRECTIONS

  • Combine vinegar, water, sugar, and salt in a pan and bring to boil. Stir to dissolve all solids.

  • Mix remaining ingredients in a heat-safe, sealable container

  • Pour boiling vinegar mixture onto vegetables and stir to combine

  • Let cool to room temp, stirring occasionally to ensure even coverage

  • Refrigerate
