Easy Chicken Curry 🐓

INGREDIENTS

3 tbsp olive oil
1 onion, chopped 🧅
2 cloves garlic, minced 🧄
½ tsp fresh grated ginger
3 tbsp curry powder
1 tsp ground cinnamon
1 tsp paprika
1 bay leaf 🍂
½ tsp white sugar
salt to taste

2 chicken breasts, cubed
1 tbsp tomato paste 🍅
1 cup plain yogurt
¾ cup coconut milk 🥥

½ tsp cayenne 🌶
½ lemon, juiced 🍋

DIRECTIONS

  • Heat olive oil on medium

  • Sauté onion until lightly browned

  • Stir in garlic, ginger, spices, bay leaf, sugar, and salt; continuing stirring 2 min

  • Add chicken, tomato paste, yogurt, & coconut milk

  • Bring to boil, reduce to simmer.
    Simmer 20–25 min

  • Remove bay leaf. Add cayenne and lemon juice.

  • Simmer 5 min

  • Serve with basmati
