Zucchini Bread

Mrs. Croxton’s recipe


INGREDIENTS
3 eggs 🥚

1 cup oil

2 tsp vanilla

2 cups grated zucchini

2 cups sugar

3 cups All-Purpose flour

1 tsp baking soda

½ tsp baking powder

¼ tsp salt 🧂

3 tsp cinnamon

1 cup nuts 🥜

1 cup raisins

DIRECTIONS

  • Preheat oven to 325°

  • Beat eggs until foamy

  • Add oil, vanilla, and zucchini, stir well.

  • Add dry ingredients, nuts, and raisins

  • Mix well, put nto greased and floured loaf pan.

  • Bake at 325° until done (about 30–45 mins).

  • Recipe makes 2 loaves, or 3 small loaves

  • You can also freeze and enjoy.
