Make-Ahead Mashed Potatoes
INGREDIENTS
5 lbs russet or Yukon Gold potatoes
8 oz cream cheese
8 oz sour cream
1+ cup milk
3 tbsp butter, sliced
paprika
fresh cracked pepper
salt
DIRECTIONS
Peel and dice potatoes
Bring to boil in salted water
Simmer for ~30 min. or until tender
Drain and beat in cream cheese with mixer
Beat in sour cream and milk until potatoes are fluffy. Season with salt and pepper to taste.
Grease 9x13β baking dish and spread potatoes evenly
Dot with the butter and sprinkle with paprika
Let cool, cover, and refrigerate up to 24 hours
REHEATING
Preheat oven to 375ΒΊ
Bake potatoes 30+ minutes until fully heated and brown in spots
