Make-Ahead Mashed Potatoes

INGREDIENTS

5 lbs russet or Yukon Gold potatoes
8 oz cream cheese
8 oz sour cream
1+ cup milk
3 tbsp butter, sliced
paprika
fresh cracked pepper
salt

DIRECTIONS

  • Peel and dice potatoes

  • Bring to boil in salted water

  • Simmer for ~30 min. or until tender

  • Drain and beat in cream cheese with mixer

  • Beat in sour cream and milk until potatoes are fluffy. Season with salt and pepper to taste.

  • Grease 9x13” baking dish and spread potatoes evenly

  • Dot with the butter and sprinkle with paprika

  • Let cool, cover, and refrigerate up to 24 hours

REHEATING

  • Preheat oven to 375ΒΊ

  • Bake potatoes 30+ minutes until fully heated and brown in spots
