Herb Rice
INGREDIENTS
2 cups jasmine rice, rinsed π
3 cups chicken stock π
1 tbsp butter
1 tbsp olive oil
Β½ onion, finely chopped π§
1 whole bulb garlic, roasted π§
1 tsp fresh rosemary, finely chopped
1 sprig thyme, stalk removed
ΒΌ tsp salt (optional)
Β½ lemon, juiced (optional) π
DIRECTIONS
Melt butter in olive oil on medium high heat
SautΓ© onions till golden
Add rice, herbs, and salt (if using)
Squeeze in roasted garlic; stir till there are no large chunks
Add chicken stock (and lemon juice, if using) and bring to boil, stirring to prevent sticking
Reduce heat to simmer, cover pan and cook for 20 min
Fluff and gently stir rice; serve
