Herb Rice

INGREDIENTS

2 cups jasmine rice, rinsed 🍚
3 cups chicken stock πŸ”
1 tbsp butter
1 tbsp olive oil
Β½ onion, finely chopped πŸ§…
1 whole bulb garlic, roasted πŸ§„
1 tsp fresh rosemary, finely chopped
1 sprig thyme, stalk removed
ΒΌ tsp salt (optional)
Β½ lemon, juiced (optional) πŸ‹

DIRECTIONS

  • Melt butter in olive oil on medium high heat

  • SautΓ© onions till golden

  • Add rice, herbs, and salt (if using)

  • Squeeze in roasted garlic; stir till there are no large chunks

  • Add chicken stock (and lemon juice, if using) and bring to boil, stirring to prevent sticking

  • Reduce heat to simmer, cover pan and cook for 20 min

  • Fluff and gently stir rice; serve
