Peruvian Chicken & Rice π

Chicken
DIRECTIONS
Mix vinegar, 2 tablespoons olive oil, 2 tablespoons garlic, paprika, 1 tablespoon cumin, lemon juice, 1 teaspoon salt, 1/4 teaspoon black pepper, and chili powder in large bowl.
Cover chicken thoroughly and let marinate overnight.
Transfer chicken mixture to a roasting pan.
Broil in oven, flipping once.
INGREDIENTS
3 chicken breasts, filleted π
2 tbsp white wine vinegar
2 tbsp extra-virgin olive oil
2 tbsp minced garlic π§
2 tbsp paprika
1Β½ tbsp ground cumin
1 tbsp onion powder π§
Β½ tbsp salt
1 tsp chili powder
1 tsp ground black pepper
Β½ tsp cayenne (if desired) πΆ
1 lemon, juiced π
Rice
DIRECTIONS
Combine all ingredients in a saucepan. Bring to a boil; turn off heat, cover, and let sit 20 minutes.

2 cups chicken broth
1 cup basmati rice, rinsed π
1Β½ teaspoons minced garlic
1Β½ teaspoons extra-virgin olive oil
Β½ teaspoon ground cumin
Β½ teaspoon dried cilantro (optional)
Β½ teaspoon sea salt ππ§
ΒΌ teaspoon ground black pepper
