Gulai Daun Singkong (cassava leaf curry)

INGREDIENTS

1 lb cassava leaves, roughly chopped 🥬
6 Chinese shallots, chopped
6 cloves garlic, chopped 🧄
4 Thai chilis, seeds removed 🌶
1” galangal, finely chopped
1 stalk lemongrass, smashed
1 tbsp turmeric powder
3 bay leaves
1 can coconut milk
salt and pepper, to taste

DIRECTIONS

  • Put shallots, garlic, chilis, and galangal in food processor and blend till smooth

  • Heat 1 tbsp oil in wok on medium high. Stir fry spice paste, lemongrass, turmeric, and bay leaves until spice paste is fragrant

  • Add cassava leaves and stir fry about 5 min., adding about 1 tsp salt and water (as necessary)

  • Add coconut milk and simmer 5 more minutes
