Lemon Bars
INGREDIENTS
¾ cup butter, softened 🧈
1½ cup flour
⅓ cup powdered sugar
1½ cup sugar
3 tbsp flour
¾ tsp baking powder
3 eggs, beaten 🥚
3 tbsp fresh lemon juice 🍋
DIRECTIONS
Preheat oven to 350º
Mix flour and powdered sugar, then add softened butter. Mix well.
Press into bottom of 8x12” pan and bake for 15 min.
Mix remaining dry ingredients, then add eggs and lemon juice.
Pour over baked crust and bake for 20 min.
Once cool, dust with powdered sugar.
ALTERNATIVES: Consider spreading a layer of blackcurrant jam over crust before pouring filling on top.
